Long time since I've been here [Nov. 18th, 2012|08:44 pm]
Wish I could remember all I'd like to post but can't. Anthony is here and very sick. He's been throwing up all day. I got him some Gatorade and hopefully he'll be able to keep it down.

Manny was here last night. I love that man.

Manny spent the last few days here. So good to be with him again. We seem to complete one another. Whether going to the store, a restaurant, sitting home watching a movie, we have fun. Always.

Went to my first counseling session yesterday. I like the therapist. Nice young asian girl.

Filed for my disability with the social security today. Hope it gets approved quickly.

Traditional Mexican posole is made from dried hominy kernels that require lengthy soaking and cooking. This version relies on canned hominy to cut preparation time. Add a burst of freshness by garnishing each serving with thinly sliced green onions and radishes, chopped cilantro, lime wedges and hot sauce.

2 tablespoons vegetable oil
2 lb. boneless pork shoulder, cubed (1 1/2 inches)
2 medium onions, chopped
4 large garlic cloves, minced
4 cups reduced-sodium chicken broth, divided
2 teaspoons dried oregano (Mexican preferred)
1/2 teaspoon freshly ground pepper
1 lb. tomatillos, husks removed, halved or quartered (4 cups), or 3 (11-oz.) cans, drained
4 serrano chiles, seeded
1/2 teaspoon toasted cumin seeds*
2 (15.5-oz.) cans yellow or white hominy, drained, rinsed
1/2 teaspoon salt

1. Heat oil in large pot over medium heat until hot. Add pork in batches; cook 6 to 8 minutes or until browned. Add onions and garlic; cook 5 minutes or until softened. Add 3 cups of the broth; bring to a simmer. Stir in oregano and pepper. Reduce heat to low; cover and cook 1 hour or until meat is almost tender.

2. Meanwhile, place tomatillos and remaining 1 cup broth in large saucepan. Bring to a simmer over medium heat; cover and cook 10 minutes or until tender. (If using canned tomatillos, eliminate cooking step.) Place in blender, along with chiles and cumin seeds; blend until smooth.

3. Stir tomatillo mixture, hominy and salt into pork; simmer, uncovered, 30 minutes.

TIP *Toast cumin seeds in dry small skillet over medium-high heat 1 minute or until seeds turn reddish brown and become fragrant, stirring occasionally. Cool.

This must be why Shawn screwed me over, yet once again. I should quit trying to be nice to people. These are posts from May 2006. He's deleted most of his comments but I have them in my Yahoo mail that comments are sent to.
May 18
I bitched about the truck again and as always did not mention who I bought the truck from. The person who I bought the truck from posted in my journal and I deleted it so that it would save them the embarrassment of having everyone know what a greedy American he is.

He says I am an "an ignorant fool". Yessur guess I am. When he had no place to live I gave him shelter. When he had no food to eat I gave him food. When he had no money I loaned it to him even though I was only making $9 an hour and he was saying "I don't work for less than $15, I have a college degree."

He says I offered to pay more. Yeah right. Apparently it was just a ploy by someone who now makes good money to rip off those who have less. That type seems to think it is their right. He says, "a fool and his money are soon parted.", Yessur guess I am.

He says, "You ignored the offer because you said your roommate wanted to keep the truck and work on it." Ain't got the foggiest where he got that idea.

He says he sent the pay to me but that UPS could not deliver it. What is wrong with the United States Postal Service that puts it in the mail box?

If you read his insults to me, http://shawnmyers.livejournal.com/ , you will see what I mean when I call him an illiterate college graduate. But it is only from a state supported college not one where intelligence is required to get in.

The reason I got screwed on the truck and the pay I am due is that the college educated, yes he likes to brag about that, lacks the intelligence to go to the Post Office, buy a stamp, and drop the check in the mail. I'd hire an attorney and sue the heck out of any college that graduated me with that little sense. LOL

Of course it is not his fault. He gave them his money and it didn't make him one little bit smarter.

Went to see the parents for breakfast this morning as has become the norm over the last few months. Told them about Shawn and the story of the truck. They really weren't suprised. All that money wasted on an education and lacks the common sense and decency to send them a thank you card for sending flowers to his fathers funeral. A man they had never met but sent because he was a friend of mine.

The education system in this state is so fucked up. Turning out college grads who lack the ability to mail a check, a thank you note, or handle the simple matter of probating a will.

My parents are in their 70's. I do not tell them everything that is going on with me because of their health. My father has heart disease and my mother has Parkinsons. They do not need, nor can their bodies withstand, to worry about my health. Should you have questions ask me. I prefer not to talk about it and thank those who have expressed concern.

I am going to say this again for the goddamned stupid fuckwad piece of shit that called my parents. LEAVE MY FAMILY ALONE! This is not a request. Call my family agian and you will rue the day you were born. I have nothing to lose. This is not a threat. This is a fucking promise.

I am so pissed off. Fucking loser that can't make it in Texas and has to flee to a Yankee state. Gets engaged to every fucking cunt he sticks his dick in. No telling how many of their fathers and brothers are after him. Then thinks he can fuck with my family.

July 19
Just talked to my Mom and told her that Shawn said, "While I will not promise to refrain from speaking with your parents, since I have a friendship with them that does not involve you,". I oftentimes see people use the anacronym ROFL. Sounded like that was what my Mom was doing. She couldn't believe that he thinks they are friends. She has been so mad at him for cheating me on the truck she would like to shoot him. That is an expression not a threat that we use down here in Texas. The more I think about it the more hilarious it is. A 30 year old punk being friends with 70 year olds. LOL

Lots of Manny [Mar. 31st, 2012|11:18 am]

Manny came over late Thursday night and we went to Walmart and bought some weights. Funny goings on in Walmart at midnight. Yes indeed. Left there and went to Taco Bell. Shouldn't be eating Taco Bell when you are buying weights and talking about eating a healthier diet. But there isn't much else open that time of night. Nothing healthy for sure. Got home and watched some Swamp people. Odd folks live in the swamps.

Yesterday Manny came over and we cooked some wings. That man can eat some wings. OMG! I made a key lime pie and he seemed to like it. I didn't, way to sweet for me. He met my friends Sara and Shane. He thought they were cool.

He may come by Sunday after work and have tacos. I sure hope so.

Manny. I'm so fortunate to have him back in my life. He came by Sunday and Tuesday. He's been working out and is looking even finer. We've finally built enough trust that he has given me his cell phone number. He has inspired me to work harder to losing the weight. Life is good.

Manny was over night before last. I'd already taken my meds and was getting sleepy. Made it until 11PM and told him I had to sleep. Apartment still isn't ready for Shawn and I to move into. It's hard living cramped into a 1 bedroom apt. Only a few more days. It'll be okay. Cooked frijoles charros yesterday and pozole today. Eatin' good. Yessur, I sure am.

Music, Manny, CD's [Feb. 26th, 2012|09:29 pm]
Manny came by Wednesday night and then again tonight. He only stayed about an hour and a half on Wednesday. He was here several hours tonight. I burned him some CD's for his truck while we watched Youtube and sang songs. He told me how glad he is that we are friends again. Gave me a great big hug. He says I'm looking good now that I've quit drinking. Says I look "fresh". Ok. Still losing weight. Gonna weigh again on Tuesday. I ate a lot today. Made lemon cupcakes and ate two of them. They be good with coffee. Shame I can only drink the decaf now. Whatever. Haven't drank in three weeks with the exception of one beer at Lupita's with dinner two weeks ago. bye

Manny was here Friday night and Saturday night. It's becoming a bit easier to to hang out. I love him and always will but rebuilding that which was torn asunder is difficult to say the least. I still tend to melt when he puts his arms around me and tells me he loves me. I want to believe him but it is hard. He is looking for a new car so we put on some music and search car lots on the internet. Thankfully we have similar taste in music. When it comes to cars he's a size queen. lol Tahoe seems to be the fave for next vehicle. Black or white preferably. I wish he was here now but I know he has to open the store in the morning. Be there at 6:30 I think. Sitting here listening to music we've bookmarked on youtube. He's good for me. We went to Lupita's Friday night. Love you Manny. Yessur, I sure do.

A little catch up [Jan. 25th, 2012|05:12 pm]
Life has been a roller coaster lately. Arturo will be losing his job in March, the restaurant is closing. He has moved in with a friend. I'm moving to a two bedroom apartment in the same complex with Shawn. It will be the first time in over 10 years I've lived with an American. Manny and I are continuing to build our friendship. It will take some time and it is hard to rebuild trust. Been hanging out with Tommy a lot lately. I almost have the attorney paid off. I hear the Thief's keeper finally kicked him out. She was way to smart to put up with his loser ass. I hope she is doing well. Over all life is more good than bad. Been a hard few months but it is getting better.
